Getting Back Lost Grades
Canvas will set a quiz for "Everyone" in your course by default; if students have already taken the examination and you remove "Everyone" from the "Assign To" field, attempts and scores for those students will be removed from the quiz.
Therefore, if students have already taken the quiz, you should add individual students using the "+ Add" button instead of removing "Everyone" from the "Assign To" field.
You can visit Changing the due date/time settings for an individual to learn how to assign a quiz to an individual student.
There are two methods to get the grades back in the gradebook for the rest of the students: via the "Assign To" button or within the assignment's "Details" page. Please select a method below and follow the steps to get the grades back in the gradebook for the rest of the students.
Method One: "Assign To" Button
First, (A) click the three vertical dots to the right of the desired assignment, and then (B) click on the "Assign To..." button.

In the tray that appears on the right-hand side of the screen, select the "+ Add" button below the initially assigned due date and time.

In the new "Assign To" box that appears below, click on the "Assign To" field and select "Everyone else" from the list.

Lastly, (A) add the original "Due Date" as well as "Available from" and "Until" dates, and (B) click the "Save" button.

Method Two: Assignment "Details" Page
Within the "Assignments" tab in Canvas, click on the title of the assignment, and then select the "Edit" button.

Click the "+ Assign To" button within the "Assign Access" section.

In the new "Assign To" box that appears below, click on the "Assign To" field and select "Everyone else" from the list.

Lastly, (A) add the original "Due Date" as well as "Available from" and "Until" dates, and (B) click the "Save" button.
